Reading and Cooking


Just finished King’s THE WIND THROUGH THE KEYHOLE and rather enjoyed it.  Why have I not read his DARK TOWER books?  I have no idea as I have read everything else he has written.  Sigh.  So many books and so little time!  His wife, Tabitha King, is also quite a writer.  Talented family, indeed.

After a week of leftovers and beanie weenies and frozen pizza I decided to cook yesterday.  Got a chicken for 89 cents a lb.  Still quite a good deal when on sale and so very versatile!  I chunked it in a big pot with herbs from the garden – parsley and rosemary and oregano and basil - and covered it with water – let it simmer for a few hours – cooled and de-boned – the dreaded de-boning.  Made a great chicken soup with the stock and veggies and alphabet noodles for old times sake and then shredded the breasts for Chinese Chicken Salad.

Here is my version:

 One pkg coleslaw mix

1/4 C diced onion

1 can mandarin oranges

1 pkg raw Ramen noodles crushed

toasted almonds and sesame seeds

This time I added shredded chicken.  Shrimp is also good as is plain veggie with no protein.  This is the first time I used Paul’s Low Fat Sesame Ginger dressing – any light Asian Dressing will do.

The best thing about this afternoon of cooking is about 4 meals done – chicken scraps for the dogs also makes for happy houndies.  And that is about all the handy hints for life you are gonna get outta me today!

p.s.  $266 later, Bruno is fine.  One thing we do not mess with is eyes – especially Basset Hound eyes.  No scratched cornea, but eye swollen almost shut before vet saw him, stained eye, found no scratches, also diagnosed a yeasty ear, injected him with Benadryl for over $30 – same dose of pills at home would have cost about 50 cents -  prescribed ear and eye meds and said come back in two weeks.  Um, maybe and maybe not on the back in 2 weeks – but one more potential bad scene all turns out ok……..is it wine thirty yet?  You BET it is!
